Preparation:
- First in a small bowl, finely grate zest from one orange.
- Then, squeeze some oranges to have a cup of orange juice and squeeze the 3 limes and mix them with the orange grate zest. Stir the mix until all the ingredients are combined.
Preparing the meat:
- Season pork with salt and pepper, then in a plate pour some flour to coat the pork and while doing it shake off the excess.
- After having the meat pork ready, Pour the 2 tablespoons of olive oil over a large frying pan and heat it medium-high until shimmering.
- Then, add the pork and cook until it turns golden brown on both sides, 2 to 3 minutes per side. Transfer to a plate. Reduce heat to medium and add a tablespoon oil. Add the red onion to the frying pan, season with salt, and cook, scraping up browned bits, until crisp-tender, 2 minutes. Add garlic and cook 1 minute, stirring.
- Add juices and zest and bring to a boil and cook until reduced by ¼ about 3 minutes. Stir in 1 to 2 teaspoons sugar, if desired. Return pork to pan and simmer until sauce is slightly thickened, 1 to 2 minutes.
- When you get the pork meat ready, you can heat some tortillas in a skillet to make the tacos.
- Serve some pork meat stew into a tortilla and garnish with some red onion and collocate some lime wedges aside. Enjoy!
